Mushroom & Pork Stuffed Acorn Squash of course!
1 lb of pork
~ 1 c chopped mixed mushrooms
1 tub ricotta cheese
1/2 c tomato sauce
oregano
garlic
ginger
rosemary
pepper
chipotle pepper sauce (not much of this though)
Cook the pork, add the herbs and spices as it cooks. Once it’s done, add the mushrooms, ricotta and tomato sauce and mix. Lop two acorn squash in half, scoop out the seeds and stringy stuff in the center. Put a pat of butter in the bottom of each, and then fill/heap the pork mix into/onto them. Back for 45-60 mins at 350. Enjoy.
